Description
 

California Gold is our highest quality uni that has a bright yellow/orange color and the firmest texture. Our uni is world famous, having been featured in magazines like Vogue and Wolfgang Puck's television show. The sea urchins from which uni come from are hand picked by local divers who deliver it to us fresh daily. We process it within 24 hours, giving it the highest freshness and quality. We do not ship uni on Mondays.

Sea Urchins are bottom feeding "echinoderms" that are found in every ocean around the world. The urchins that we process, Strongylocentrotus franciscanus range from dark blackish purple to red in color. They are covered with short to long spines. The diameter of the shell can get up to 6 inches. The average weight of a sea urchin is one pound. California Sea Urchins are found off the coast usually in about 50 feet of water in kelp beds.

Sea Urchins are harvested for their internal roe -- "uni" in Japanese -- that is considered an aphrodisiac in some cultures. Uni is known as a delicacy in Japan and sushi bars worldwide because of its sweet flavor and succulent texture that melts in your mouth. The exact technique of processing uni is a trade secret that has been perfected over the last 20 years by Catalina Offshore Products. In fact, the business started with owner Dave Rudie diving for sea urchins & seaweed. Sushi bars from across the country know that the best uni comes from Southern California, and Catalina Offshore Products. We keep our product in coolers that are maintained at 32 to 35 degrees Fahrenheit until it is packed and shipped daily. We pack in insulated containers with gel-ice for the best quality. Wooden trays house the strips of uni for a traditional Japanese presentation.

Uni Grades:The gold and premium grades of uni are always fresh, and the vana is frozen unless otherwise requested to be fresh. All uni tastes good and can be eaten raw.
California Gold: Bright yellow/orange, firm texture (formerly A-Grade)
California Premium: Mild yellow color, softer pieces (formerly B-Grade)
Vana: Dark color, melting soft, also known as Vana (formerly C-Grade)

Our fresh and live seafood products are as fresh as you can get because we purchase directly from reputable fishermen in California and Baja California who take great pride in providing the highest quality seafood. The seafood is caught and immediately iced or brought to our live tanks until you order. We package it with care, keep it cold in insulated boxes and ship it overnight with FedEx so that it reaches your door fresher than the vast majority of most supermarkets and restaurants.

Everything I ordered from you was fabulous.  Uni is my favorite and yours by far is the best I've ever eaten, even in all of our Sushi restaurants in San Francisco. Tuna was so fresh, and there was some "bonus" fatty with the piece I ordered.  Even the frozen hamachi, which I would never consider eating, was far above expections!  You are a dream come true for sushi/sashimi gourmets!

Outstanding Quality and Freshness April 25, 2007

I regularly order both the Premium and Gold uni, the Gold for myself and the Premium for my dad. He prefers the Premium for it's "authentic uni taste".  In my opinion, the Premium is characterized by a more robust taste that leaves a mild but bitter aftertaste on the palate. In contrast, the Gold is a tad firmer, with a sweeter taste and no aftertaste. I prefer the Gold, but certainly can't complain about the Premium. To me, the Gold is like having coffee with cream and sugar (milder/sweeter), while the Premium is like having black coffee (stronger/more bitter). Depending on your taste buds, you can't go wrong either way.  The Gold is almost twice the price of the Premium, but worth it if you enjoy a firmer, sweeter, milder taste.  Highly recommended!

1 - This UNI's the stuff dream's made of!

2 - Excellent customer service.
    Very frequent e-mail notifications of products' whereabouts. Great people.

3 - I didn't know what size 80g was, but apparently it's very very small.
    I ate 1 small rice bowl "Uni Don" & it (1 box worth) was gone.  $15 kinda steep. . .

4 - Because I live in colder climate Uni got frozen during transit. Therefore, it was already mushy on the 2nd day. Not their fault, though.

All in all, EXCELLENT uni.  Love the customer service. Thank you!!!!
