Not actually tuna, but even better (or butter). Got 2.2 lbs of this (when it was 2.2 offered last week) and this stuff is AMAZING! Definitely one of my favorite fishes to get at sushi bars, and the quality here at catalina is superb. You will not regret this fish! Makes for amazing sashimi.

Butter!

I haven't eaten butter in a LONG LONG LONG time so when I first tried escolar (a while back) I almost spit it out because it was melting in my mouth just like butter... and tasted TOO GOOD TO ACTUALLY BE FISH! Don't you worry though, I didn't spit it out and in fact I ordered another go around because this fish is SUBLIME!
I recommend it for anyone who adores Chilean Sea Bass &/or Black Cod/Sable Fish! But be forewarned... some people have digestive issues with this fish... I myself: DO NOT! :P

OMG! That about sums it up!! This fish is so amazing!! I tried it for the first time with a sushi party I threw on Sunday night, and it was truly amazing! I served it both as sushi, and also seared a chunk and then sliced it and gave it a bit of garlic, salt, and lemon, and it was to DIE for!!

We love these fillets! I can't imagine escolar being any better than this. The texture is perfectly smooth and silky, the flavor is sweet and touched with a bit of ocean. I love it!
