I LOVE the "white tune" at our east-coast sushi restaurants (escolar) - it's my favorite. I tried this "local US/Mex" version first - it didn't seem as buttery as this Korean one but was still good. Also, the US version wasn't cut in perfect rectangular blocks, like the Korean version, but was not difficult to portion out. I didn't have any digestive issues with the US version, but did with the Korean one. The US one looked like it was a tail section. I heard the tail section has less fat (which is what causes the digestive issues). You may want to try the US one before trying the Korean one. Keep portions low at first and you should be ok. It is also good if you marinade it with mild vinegar/water with some msg (similar to the marinade for mackerel but less acidic). The MSG tends to add to the buttery flavor. My next order will include both US & Korean escolar.
