Description

We carry frozen, boneless sushi/sashimi grade toro (bluefin belly meat), which is one of the most prized types of sushi in the world. Due to the high fat content, the fish has a white to pinkish color. This frozen toro originates from tuna farms off the coast of Australia. Pieces are 10 to 12 ounces. Blue fin tuna (Thunnus thynnus) are found all over the world, usually in deeper offshore waters. They can get as long as six feet and 300 pounds but the average weigh is 60 to 100 pounds. We do not recommed that you cook Blue fin toro since it has a much higher fat content, which produces a strong fish taste and odor when cooked.

Frozen toro preparation instructions:

For the product to maintain its highest quality, it is important that the instructions for the preparation and handling of the frozen tuna are strictly followed.

Materials:

  • Bowl,
  • Salt,
  • Plastic Food Wrap,
  • Teaspoon,
  • Thermometer,
  • Cheesecloth or thin sponge (do not substitute with soft papers such as paper towels or napkins as they may stick to the product).

Instructions:

  1. Prepare lukewarm water (approx 95 degrees Fahrenheit) and add salt at a rate of 2 teaspoons per liter of water.
  2. Gently rinse surface of product with cold water
  3. Immerse the product into the prepared lukewarm saltwater solution for 3-5 minutes, depending on size.
  4. Remove from saltwater solution and gently rinse with cold water to remove salt from product surface.
  5. Gently remove excess moisture from product.
  6. Wrap product in sponge or cheesecloth (or hard material kitchen paper). Finish by wrapping in plastic food wrap. Use care to ensure the product is not wrapped too tightly.
  7. It is necessary to allow the product to “breathe” to achieve appropriate color. Plastic food wrap should not come in direct contact with the product.
  8. Refrigerate 3-5 hours, depending on size.

Notes:

  • Product should be consumed within 1 day of defrosting. Color will be compromised after 2 days.
  • If the product is vacuum packed, remove the packaging prior to defrosting.
  • During defrosting, you might see the product's shape is partly changing, but this action is a natural phenomenon.
  • Do not freeze the product once it has been defrosted. This will affect the color of the product.

pricey for what you get April 3, 2011
Reviewer: Aileen Wong from Albuquerque, NM United States
There was so much waste with this fish that I can't help but feel ripped off.  Though I have been delighted with most of my purchases at Catalina OP, this one fell way short.  The instructions were very thorough and I followed them to a t.  However, after cutting off the thick skin and sinew, I found bone, yes bone in a belly cut, that also needed to be cut out, hence reducing the edible portion by a significant amount.  What was left was delicious even if it was mangled from selectively paring off the fish from the bone.  Was thoroughly disappointed by this overpriced item...it had great potential.

Mediocre December 27, 2010
Reviewer: Juan Chow from McAllen, TX United States
I was very dissapointed with the piece of frozen toro that I got. The skin was still attached, which when you remove it takes almost half of the weight. Then the piece I got had a lot of sinew and a piece of the fin. Again Cleaning that up I ended up with a piece of toro that weighted about 0.3 lbs for $44.00! Never again will I order frozen. I have tried their fresh toro and it was pretty good, bad luck that they were out of stock when I ordered.

Really loved this cut. Followed thawing directions very closely. Buttery and delicious, very well received by dinner guests. Did not have issues with sinew like other users. Will buy again!

Worth the money? October 6, 2010
Reviewer: Yoshinori Kamo from Baton Rouge, LA United States
I have to agree with the second reviewer about it containing too much fiber. Although quite butterly, it's  not "melt-in-the-mouth" kind of toro. It's not the easiest fish to prepare, either (with skin and other wastes).
While it tastes very good, I am not sure if it's worth the money, particularly when we have so many better choices from C.O.P.

A hit at my party. April 17, 2010

The Toro I received was very buttery, and tender.  My family are quite experienced sushi consumers and this product was well received.  I only wish I could get it fresh, then I'd consider 5 star rating
