Frozen cobia sushi has a nice white color because of their higher fat content. We sell frozen cobia fillets that are a product of Unified Seafood Company. This product is flash frozen with filtered wood smoke(Carbon Monoxide) which is used as a preservative and guarantees the highest quality for making sashimi. They are caught primarily with hook and line, and their maximum length of 2 metres (78 inches). Each piece is ~1.1 lbs.

I bought this over the weekend for a sushi dinner.  I've never had Cobia before but always like to try something different.  The fish took about 24 hours to defrost in the fridge.  It reminded me of Spanish mackerel in flavor, although it had a firmer texture.  Worked great as sashimi, in a rainbow roll and for tekka maki.  I will definitely buy again.
