The groupers we sell include baquetas (
Epinephelus acanthistius
), Garropas, Bayas, and Leopard Grouper or cabrillas (
Mycteroperca rosacea
). While the average size of grouper is 5 to 20 pounds some species of grouper can get as big as 6 1/2 feet long and 200 pounds. Most groupers are found in deeper waters of the Sea of Cortez and while they are caught year round, the best availability is from January to July. They are typically caught by hook and line. Grouper is a firm white meat fish that has a mild flavor. They can be grilled or pan-fried.
