We sell Pacific Halibut (Paralichthys californicus) and Cortez Halibut (Flounder) (Paralichthys aestuarius). Halibut are bottom feeding fish found near the coast on soft bottoms not too faroff of the Pacific Coast and Sea of Cortez. They are flat fish that camouflage themselves with the ocean floor and are related to flukes, flounders and sole. Cortez Halibut typically range from 5 to 10 pounds, while Pacific Halibut are about 5 to 20 pounds. Halibut are caught by set net and they are more commonly caught during the winter and spring time. Halibut is a moist and tender white meat fish that is delicious pan fried, poached or steamed.
