We carry frozen, boneless bloodline out skin off sushi/sashimi grade Hara Tenmi (Hara means tuna parts of belly), which is one of the most prized types of sushi in the world. Due to the fat content, the fish has a pinkish color. Our frozen Hara Tenmi originates from tuna farms off the coast of Croatia in the Adriatic Sea. Pieces are .9 to 1.2 lb. Blue fin tuna (Thunnus thynnus) are found all over the world, usually in deeper offshore waters. They can get as long as six feet and 300 pounds but the average weigh is 60 to 100 pounds. We do not recommend that you cook Blue fin Hara since it has a much higher fat content, which produces a strong fish taste and odor when cooked. Frozen Hara Tenmi preparation instructions: For the product to maintain its highest quality, it is important that the instructions for the preparation and handling of the frozen tuna are strictly followed. Materials: Bowl, Salt, Plastic Food Wrap, Teaspoon, Thermometer, Cheesecloth or thin sponge (do not substitute with soft papers such as paper towels or napkins as they may stick to the product). Instructions: 1. Prepare lukewarm water (approx 95 degrees Fahrenheit) and add salt at a rate of 2 teaspoons per liter of water. 2. Gently rinse surface of product with cold water 3. Immerse the product into the prepared lukewarm saltwater solution for 3-5 minutes, depending on size. 4. Remove from saltwater solution and gently rinse with cold water to remove salt from product surface. 5. Gently remove excess moisture from product. 6. Wrap product in sponge or cheesecloth (or hard material kitchen paper). Finish by wrapping in plastic food wrap. Use care to ensure the product is not wrapped too tightly. It is necessary to allow the product to "breathe" to achieve appropriate color. Plastic food wrap should not come in direct contact with the product. 7. Refrigerate 3-5 hours, depending on size. Notes: -Product should be consumed within 1 day of defrosting. Color will be compromised after 2 days. -If the product is vacuum packed, remove the packaging prior to defrosting. -During defrosting, you might see the product's shape is partly changing, but this action is a natural phenomenon. -Do not freeze the product once it has been defrosted. This will affect the color of the product. |
