We sell whole large red and/or black wild live sea urchins, Stronglycentrotus franciscanus. These are the same Southern Californian sea urchins we use process to make our world famous uni. Each sea urchin weighs approximately one pound and contains five pieces of uni.

Sea Urchins are bottom feeding "echinoderms" that are found in every ocean around the world. The urchins that we process, Strongylocentrotus franciscanus range from dark blackish purple to red in color. They are covered with short to long spines. The diameter of the shell can get up to 6 inches. The average weight of a sea urchin is one pound. California Sea Urchins are found off the coast usually in about 50 feet of water in kelp beds.

Sea Urchins are harvested for their internal roe -- "uni" in Japanese -- that is considered an aphrodisiac in some cultures. Uni is known as a delicacy in Japan and sushi bars worldwide because of its sweet flavor and succulent texture that melts in your mouth. The exact technique of processing uni is a trade secret that has been perfected over the last 20 years by Catalina Offshore Products. In fact, the business started with owner Dave Rudie diving for sea urchins & seaweed. Sushi bars from across the country know that the best uni comes from Southern California, and Catalina Offshore Products. We keep our product in coolers that are maintained at 32 to 35 degrees Fahrenheit until it is packed and shipped daily. We pack in insulated containers with gel-ice for the best quality. Wooden trays house the strips of uni for a traditional Japanese presentation.

Uni Grades:The gold and premium grades of uni are always fresh, and the vana is frozen unless otherwise requested to be fresh. All uni tastes good and can be eaten raw.
California Gold: Bright yellow/orange, firm texture (formerly A-Grade)
California Premium: Mild yellow color, softer pieces (formerly B-Grade)
Vana: Dark color, melting soft, also known as Vana (formerly C-Grade)

Our fresh and live seafood products are as fresh as you can get because we purchase directly from reputable fishermen in California and Baja California who take great pride in providing the highest quality seafood. The seafood is caught and immediately iced or brought to our live tanks until you order. We package it with care, keep it cold in insulated boxes and ship it overnight with FedEx so that it reaches your door fresher than the vast majority of most supermarkets and restaurants.

There is a special tool for cracking sea urchin but a kitchen knife handled very carefully will get you there. Your hands will get stained purple unless you wear gloves which will probably get pierced by the spines anyway. Scooping out the roe without breaking it is certainly a skill requiring patience and practice but the roe tastes the same regardless of your success in this. A teaspoon worked pretty well for me. Row straight from the shell is incredible. It's seasoned by sea water and unless washed might have flecks of what I assume is partially digested sea vegetables and algae. The rest of the stuff inside adds yet another level of seasoning. This might sound disgusting but its true. Ive always loved uni. But the stuff that comes straight from the shell I found so much more intense in flavor, that I would strongly recommend this, even with the extra effort involved.

Took urchins out of shell cleaned and used the shells as bowls for exotic presentation. Was an immediate hit! The roe was of excellent quality. Will definatley order again!

I've been an avid sushi eater since I was 5, and I must say that I have never had the opportunity to get such fresh looking and tasting urchin, without leaving the house. My family and I usually take an hour trip to Redondo Pier, but not today! My son wants to save the beaks and bring them to show and tell. My brother wants to save the shells and dry them out to have a festive way of drinking sake. My dad and I just enjoy slowly picking away and the golden jewels to make our famous uni shooters. I ordered these to surprise my husband who loves sea urchin. We got them right on time and were amazed at how huge and live these things were. They were the freshest urchins we've ever had.... So good!! The packaging was also great. Will definitely order again. We have the video from the night we ate them right in the kitchen on youtube.

Just got off the phone to discuss the pricing.  Found the website information a little confusing, because I thought I was ordering 4 urchins, not 4 pounds.  So if you're looking at this, the price is by the pound, not by the piece.  Ruined my appetizer plans for my clients tonight, but the urchins do look nice.
