Our Carlsbad Blonde oysters (Crassostrea gigas) are
sustainably grown and locally farmed in Southern California by Carlsbad
Aquafarm. This is the aquafarm's signature oyster. It is the same oyster as
but more mature, therefore larger and with a subtle flavor profile difference.
Blondes provide a refreshing brininess, along with a touch of melon and
cucumber and a subtle metallic finish. Deep-cupped shell, full of flavorful

Located just outside San Diego, Carlsbad Aquafarm minimally
impacts marine habitats, wild fish populations, water quality, and the
community. Suspended long-line tray culture keeps shellfish product clean and
optimally minimizes contact with the marine environment. Rigorous laboratory

Tip: Live oysters should have tightly-closed, clean,
unbroken shells (if gaping slightly, live oyster will close when tapped), and
fresh scent of the sea. Store oyster in ≤40°F refrigerator covered with a moist
cloth in breathable container for up to 5 days. There is no such thing as a
time of year not to purchase. When oysters are spawning, their flavor, texture
and size are slightly compromised but not their freshness.
