Baja Farmed Yellowtail
Yellowtail are related to the tuna family and recognized
by their yellow tail and a yellow stripe across their body. Farmed yellowtail (Seriola
lalandi) displays flesh that is whiter in color because of a higher fat
content than its wild counterpart. Our farmed Baja yellowtail, or Baja hiramasa, is responsibly farm-raised by
Baja Seas in Bahia Magdalena, a large bay in southern Baja California. Its buttery texture
and bright, mild flavor make the Baja hiramasa similar to Hawaiian kampachi (Seriola
rivoliana), and provides a slightly less fatty alternative to Japanese hamachi (Seriola quniqueradita). It’s great for sushi, crudo as well as
Baja Seas’ entire production is underscored by responsible technology. Recirculating Aquaculture Systems (RAS) create a small water footprint
by diminishing pollution and disease; fish are fed sustainably-sourced protein- and
omega-rich fish meal derived from sardines in a low Fish In-Fish Out (FIFO)
ratio; fish are raised without antibiotics or paraciticides; and semi-automated
feeders and feed cameras prevent overfeeding. The result of Baja Seas' commitment to a minimal environmental impact is a great tasting fish!
