Description

The most common members of the snapper family are red snapper, yellowtail snapper (Lutjanus argentiventris) and pacific silk snapper (Lutjanus peru). Snapper average about 1 to 2 1/2 feet in length and weigh 1 to 6 pounds each. Red snapper are found in large schools offshore in 300 or more feet of water throughout the Gulf of California. Snapper are primarily caught by hook and line and are more commonly caught during the winter and spring time. The fish are cut into succulent, skin-less fillets shortly after the fish arrives in our plant. Snapper fillets are moist, flaky white meat that are best prepared by steaming, baking or pan-frying.
