wow.. it s so super good.. lol well, you can eat them all dont need to cut those out. I think i can eat all kind of sushi so.. that dark meat doesnt bother me at all so.. eat them dont throw it away

I have ordered this twice and received it twice.  Both times it was vacuum sealed, and a very good sized fillet.  I only use this for sushi, so I trim the dark meat away, so I can't comment to the quality of that portion as some others have.  But the light meat is as good as any hamachi I have ever eaten.

This was the only part of my order that wasn't professionally packaged. It came wrapped in a paper towel inside a light weight plastic bag that was tied at the top - not vacuum packed. Others have reported problems with hamachi and I can see that quality could be hit or miss. My order rode around all day on a local Fed Ex truck, but it was below freezing that day.

The fish is very good though. I am eating mine raw. Hamachi does have a stronger flavor than most, though, and I wonder if complaints about the darker portion is from people who just don't like a stronger fishiness flavor.

Very very good, but had a very fishy smell when I opened the pouch.  Nobody got sick, though, so I guess it was OK in the end.  Taste and texture were superb.

I was disappointed in the Hamachi (all the other items I got were great!).  The piece I received had a lot of dark meat and much of the light meat was very tough. There was a small sliver of REALLY delicious meat along the side but it wasn't worth the overall cost. I see that all the other reviews are high so I might have gotten a "lemon".

This hamachi is fantastic! It surely surpasses anything i have had in japanese restaurants in the states. The hamachi comes vacuum sealed. MARUSEI brand of Japan. I DO NOT recommend cutting away the dark flesh, its completely edible and very delicious.  The read meat discolors when exposed to oxygen for long periods of time- usually by the second day of being in the fridge.

When I pulled the filet out, I was skeptical.  It had a fishy smell to it.  But, that must have been all in the blood line because once I cleaned up the filet and plated a serving, the smell was gone.  Yes, you can expect to put a little work into one of these filets before being able to enjoy it.

You'll have to cut out the blood line, which is the dark red meat.  It is edible, but it has an acquired taste.  These filets are from Japan, and they don't waste fish over there, that's probably why it is not removed.  Also, you may have a thin sinew line on the edge of the filet opposite the bloodline.  Slice that away as well.

Then, slice thin pieces against the grain and welcome yourself to heaven!  This is the perfect fish for sashimi, or any kind of sushi.  It is perfectly tender, has just the right amount of oils, and the flavor is rich and delicious.  I even snapped a quick picture of my first serving so that you can see how amazing it looks http://twitpic.com/1dybrg
