Swordfish (Xiphias gladius) received their name from the large spear protruding from their nose. Swordfish can get as large as 15 feet and weigh as much as 1100 pounds. The average size of our swordfish is 100 to 200 pounds. They can be found worldwide in warm waters. The best season for swordfish on the West Coast of the United States is during the fall. They are caught by long line and by nets. Swordfish has a light meaty flavor with a medium firmness, moist texture and is excellent on the grill. We purchase only the finest Pacific Coast swordfish, a healthy population that roam the ocean from California to Japan.
