As Paul mentioned in his review, this Ika has the absolute perfect texture. It is tender yet somewhat tough to bite through. I was amazed by this, since the Ika that I order at the local sushi bar is always too tough and flavorless. Perfect size cuts, very well packaged, ready to defrost and serve.

So tender, yet a slight snap to the bite. (Al dente texture?). Never had squid like this. Unbelievable flavor. Sweet and complex. Then I accidently dropped a couple of pieces in a light flour batter and they fell into a pan of hot oil. I know you shouldnt treat Sahimi grade anything like this, but the result was the best calamari ever!

I was pleasently suprised to see cuttlefish as the source, I always wanted to try cuttlefish. The meat was softer and tastier than the Ika I get at resturants. Still has the squid firmness, I really enjoyed it.

I ordered 20 last time and this time, another 10.
Best Ika you can get in the US. Very comparable to the Ika served in Japan.
Buy lots, keep them frozen and it will last.
Very satisfied.
