LEMON-BASIL SCALLOPS WITH GREEN BEANS
This is a lite and easy dish all you need is one pan, its alos low calories. you can serve the scallops with rice or french bread and a glass of white wine. finished off with a light dessert of sorbet or fruit. Here we go, quick and easy. 4 Servings 1 small red onion 1/2 fresh green beans 1/2 sea scallops 1/2 cup chicken broth 1 table spoon lemon juice 2 teaspoon cornstarch 1 table grated lemon zest 1/2 teaspoon basil 1/4 pepper 1 tablespoon olive oil 2 cloves garlic, minced or crused 1. Cut the onions into thin wedges. Cut the fresh green beans into 2-inch lengths. Halve any very larger scallops. 2. I(n a small bow, add together the broth, lemon juice, cornstarch, lemon zest, basil and pepper 3. In a skillet, warm the oil over medium-high heat until hot but NOT SMOKING. Add onion and garlic and saute for 1 minute. Add scallops and cook untill they are alomost completey Opaque, should be about 4 minutes. 4. Add the green beans. Stir the broth mixture to reblend the cornstarchand add it to the skillet. Bring the liquid to a boil, stirring constantly. Reduce heat to medium-low cover and simmeruntil beans are crisp and the scallops are cooked through, again about 4 minutes working time 15 minutes total time 20 minutes
