BROILED FILLETS WITH GARLIC BUTTER AND MUSTARD BREADCRUMBS
Its a good rule of thumb to always toss a lemon into your shopping cart when buying fish for dinner, as alot of fish recipes- including this one- call for lemon juice or zest. Even if your simply broiling, baking or poaching the fish, a squeeze of lemon adds an incomparable fresh flavor. If your out of lemons when you make this dish, sub 3 tablespoons of bottled or frozen lemon juice and omit the zest. working time:15 minutes total time: 20 minutes 4 servings 2 tablespoons butter 2 tablespoons Dijon Mustard 2 tablespoons olive oil 1/4 cup chopped parsley (op) 3 cloves garlic, minched or crushed 1 teaspoon oregano 1 lemon 1/4 teaspoon salt 4 small fillets of firm white fish 1/4 teaspoon pepper 1/4 cup fine unseasoned breadcrumbs ______________________________________________________________________________ 1. Preheat the broiler. 2. use large broilerproof skillet, warm butter in the oil over medium heat until the butter is melted, Add garlic and cook, stirring untill the garlic is a golden brown, about 3 minutes. 3.grate the zest fro the lemon. Halve the lemon and set aside. 4. Measure out 2 tablespoons of the garlic butter and set aside in a small bowl. turn up heat to skillet to medium-high. Add the fish and cook until golden brown on the bottom, about 4 minutes, remove from heat. 5. In a small bowl, combine the lemon zest, mustard, 2 tablespoons of parsley, the oregano, salt and pepper. 6.Squeeze the juice from the lemon halves over the fish in the skillet. Spread the mustard mixture over the fish and dust with the breadcrumbs. Drizzle the reserved garlic butter over the top. 7.Place the skillet under the broiler and broil about 4 inches from the heat until the top is golden, and the fish just flakes when tested with a fork, about 3 minutes. 8. serve sprinkled with the remaining parsley.
