ITALIAN STYLE FISH FILLETS
One skillet cooking is the easy fish dish for those that want a great meal without making a mess of things 4 Servings 1 bunch of scallions (6 to 8) 2 tablespoons olive oil or other vegetable oil 3 cloves garlic, minced to crushed 1 cup crushed tomatoes 1 tablespoon tomatoes paste 1 teaspoon basil 1/4 teaspoon pepper 1 large yellow squash 1 1/2 pounds of firm white fish fillets 1/4 cup chopped parsley ------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------ 1. Coarsely chop the scallions 2. In a large Skillet, warm the oil over medium heat until hot but not smoking. Add scallions and garlic and cook, stirring occasionally, until the garlic starts to brown, about 3 to 4 minutes. 3. Add the crushed tomatoes, tomatoes paste, basil and pepper and bring to boil. Reduce the heat to medium-low, cover and simmer for 10 minutes. 4.Slice the squash into rounds. Add it tot he tomatoes sauce and simmer 5 more minutes. 5.Cut the fish into 1 inch squares, Add the fish to the simmering sauce. add more heat if needed as the fish tends to cool down the simmering sauce. Cover and cook until the fish is still firm but stills flakes easy. 6. Stir in parsley There you have it, a quick and easy one skillet meal. Serve with dinner salad and hot buttered bread.
