Pacific bluefin tuna (Thunnus orientalis) is one of the most highly
prized of all types of tuna used by sushi chefs, and is always in high demand. They
can get as long as six feet and up to several hundred pounds, but the average weight
is 60 to 100 pounds. Tuna are extremely active and travel thousands of
miles through diverse environments. These conditions contribute to wild-caught
tuna’s taste, texture and nutritional value.
Our wild California bluefin are harvested off California and Baja California. Ranging from 15-25 pounds, these are smaller in size than
a typical farm-raised tuna. They are also less fatty which gives them a
sweeter flavor similar to yellowfin.
Handled with care
and graded by our specialists for color and fat content, these bluefin loins are
perfect for any sushi dish. They are also great pan seared!
While Pacific bluefin is considered overfished in some areas, it is not considered threatened. The U.S is working with ICCAT to rebuild bluefin stocks and adheres to strict catch regulations. U.S fisheries generally harvest a small fraction of the total Pacific-wide bluefin harvest, and represent only two percent of the average annual landings from all fleets fishing in the Eastern Pacific Ocean.
