A true delicacy, eel (Anguilla anguilla) has a firm texture, high fat content and full, distinctive flavor. Unagi sushi refers to farmed freshwater eel that has been barbequed, and basted in a sweet, savory lacquer known as eel sauce. Ours is Uokichi brand and comes frozen in 10 ounce vacuum-packed portions.
To prepare, simply thaw in refrigerator overnight and then broil in the oven to bring to temperature. Cut into desired portions and serve as nigiri sushi or use for chirashi bowls or sushi rolls, such as caterpillar rolls.
